This is one of our favorites because it’s so quick and easy to throw together with ingredients that I usually have on hand. I wasn’t feeling the best yesterday but by lunch time this sounded good and it was ready in about 15 minutes! Here’s what you’ll need:
- 2 49.5 oz. cans of chicken broth
- 2 C. water
- quart of tomatoes, chopped, with juice
- 10 oz. frozen chopped spinach, thawed
- 2 12.5 oz. cans chicken breast
- 2 cloves garlic, minced
- 1 lb. box orzo pasta
In a large stockpot, bring the broth and water to a boil and cook the pasta as directed on the box. While the orzo is cooking, get the tomatoes, spinach, chicken all opened and the garlic minced. As soon as the orzo is cooked, add the remaining ingredients and heat through.
